Mark Wilson - Chef Consultant
Chef Mark Wilson has been involved with just about every facet of the food business spanning a 35 year career. After graduating from a leading UK culinary school he undertook several years of intense classical cuisine training in the British hotel, restaurant and pub system.
In the 80’s Mark immigrated to Canada and worked for several top-flight hotels and restaurants. This was followed by the challenge of developing and operating a leading-edge cocktail lounge and catering operation as a franchisee.
In the mid-90’s Mark was hired to assist the newly-formed food service team at Nestlé Professional. Over a 10 year span he helped develop and implement the Nestlé Integrated Menu System across Canada and the US, working with chain and independent restaurants. He also headed the North American transportation channel and was the key driver for custom-label product development for national accounts creating hundreds of products.
He has taught at George Brown College and is an active member of the Canadian Federation of Chefs, WACS, and the CAFP while being a contributor to Foodservice & Hospitality Magazine and The Globe & Mail.
